Ratatouille

A lovely, simple meal using the best of Summer ingredients.

  • 1.Heat 2 tbsp oil in a heavy based pan
  • 2.Fry aubergine, courgette and pepper until lightly browned, but not cooked through. Remove from pan
  • 3.Add another tbsp oil in the pan. Add onion and garlic
  • 4.Fry until softened and starting to brown
  • 5.Add browned veg, vinegar, oregano and tomatoes
  • 6.Season with salt, pepper and sugar
  • 7.Mix well and simmer for around 30 minutes, or until reduced and sticky
  • 8.Tear over basil leaves
  • 9.Serve with a chunk of bread, cous cous or new potatoes
  • 2 red onions, cut into chunks
  • 4 garlic cloves, roughly chopped
  • 3 small/2 medium courgettes, cut into chunks
  • 1 medium aubergine, cut into chunks
  • 1 pepper, cut into chunks
  • 400 chopped tomatoes
  • 1tsp oregano
  • 1tbsp balsamic/red wine vinegar
  • pinch of sugar
  • fresh basil (optional)
