Em’s Cold Busting Soup

This is such a good winter warmer, I always have a pot of it on the go when I have the inevitable change of season cold. It’s packed full of turmeric, iron, and vitamin C, all great for supporting the immune system whilst it shakes off viruses!

Change the recipe to suit whatever you have in, it’s super flexible. Add chard instead of spinach, macaroni/spaghetti instead of noodles (just adjust the cooking time), extra chillis if that’s your thing- get inventive!

How to cook

  • 1.Heat oil in a sturdy pan
  • 2.Add the spring onions, garlic, chilli, ginger and turmeric on a low heat until all slightly softened. Cook for 3-4 minutes
  • 3.Add a couple of handfuls of lentils and mix everything through. Cook for 3-4 minutes, adding a splash of water if things start to catch
  • 4.Add stock (around 1-1.5 litres). Bring to a gentle boil, turn down the heat, cover and simmer for 15 minutes
  • 5.Add the beans, break up some noodles into the pan and cook for a couple of minutes
  • 6.Add greens, a good dash of soy sauce/tamari and juice of a whole lime
  • 7.Voila! I like to add more greens, soy/tamari and lime to each bowl. Serve with a chunk of bread

  • Coconut oil
  • 4-5 Spring Onions - finely sliced
  • 2 Garlic Cloves - crushed and chopped
  • Chilli - finely sliced
  • Thumb sized piece Fresh ginger- grated
  • Small chunk fresh turmeric - grated
  • Handful red lentils
  • 400g tin beans
  • Handful noodles
  • Chopped greens (spinach and chard work well)
  • Soy sauce/Tamari
  • 1 Lime
  • Veg stock
