Asparagus, Courgette and New Potato Frittata

  • 1.Put potatoes in a large pan of water and boil for 5-7 minutes
  • 2.Add in the asparagus to boil for the last minute
  • 3.Drain asparagus and potatoes
  • 4.Meanwhile, heat a good glug of oil in a frying pan. Add the onion and fry for 5 minutes
  • 5.Add the courgette and potatoes and fry for another 3-4 minutes
  • 6.Season the eggs with salt and pepper then add to the pan
  • 7.Sprinkle in the asparagus, making sure it is evenly distributed
  • 8.Place the pan under a medium grill. Cook for 5-10mins, or until the frittata is golden and cooked through

  • 300g new potatoes, scrubbed and quartered
  • 75g asparagus tips
  • 1 courgette
  • 1 red onion
  • 6 eggs, beaten
  • salt and pepper
