How to cook
1. Heat oil in a sturdy pan
2. Add onion, garlic, chilli and ginger. Gently fry for 3-5 minutes
3. Add spice mix, stir to coat everything and fry for another minute
4. Add potatoes and cauli florets with a pinch of salt and good splash of water
5. Stir, cover and gently cook over a medium heat for around 5 minutes
6. Add tomatoes, another splash of water and stur
7. Cook uncovered for 10-15 minutes or until the potatoes and cauli are tender
8. Squeeze in lemon juice, add more salt to taste. Stir and serve!
Ingredients
1 tbsp coconut oil
medium onion- diced
2 garlic cloves- finely chopped
3cm piece ginger- finely chopped/grated
2 tsp indian spice mix
fresh red/green chilli- finely sliced
4 potatoes- peeled and cubed
1 small cauliflower- broken into florets
4 medium tomatoes- chopped (or 1/2 tin)
juice of 1/2 lemon
good pinch of salt
